100% Merlot This wine was dedicated by its winemaker to his daughter Alice and is a symbol of eternal love and infinite dedication.It comes from Merlot grapes harvested late, after partial on vine withering, then carefully selected and processed manually in the Sopraceneri (subregion of Ticino) vineyards located on a slope and assembled in such a way as to enhance the fruity characteristics of the terroir.After a soft pressing that leaves the grapes partially whole, the grapes are macerated in stainless steel containers until alcoholic fermentation is complete. The malolactic fermentation takes place in small (225 liters) and large (400 liters) second passage French oak barrels, with the intention of bringing out the natural aromas of the grapes. The refinement follows, which lasts between 24 and 36 months. Intense ruby ​​red colour.Intense and harmonious bouquet with good complexity and notes of black berry fruit and toasting with hints of vanilla and coffee.Full-bodied, warm, round and enveloping on the palate. Good structure and intensity. Balanced and persistent aftertaste.Pairs well with premium red meat cuts, game birds, cured meats and hard Alpine cheese.

100% Merlot This wine has been vinified in terracotta jars and represents the beginning of a journey to rediscover ancient techniques and flavours of times gone by. From the delicately destemmed bunches, whole grapes are obtained that are left to ferment for a few months in the amphora where the alcoholic fermentation takes place slowly. The peculiarities of winemaking in terracotta jars is the natural micro-oxygenation, which practically does not require human intervention, good thermal insulation and, last but not least, minimal aromatic release which allows the identity profile of the wine to be maintained at its maximum potential.The malolactic fermentation and the refinement are carried out in third passage French oak barrels, allowing the wine to maintain its character.On the first nose, well-defined hints of ripe fruit in alcohol,and hints of spices. On the second nose, blueberry jam and maraschino cherry alternate with tobacco, coffee and notes of medicinal herbs such as sage and thyme. An intense and persistent wine with a wide bouquet of aromas. Dry and very warm taste, with well-marked but ripe and integrated tannins. Good flavour and medium freshness. It has a finish rich in ripe fruit and with notes of roasted green coffee. Pairs well with barbecued and roasted meats.This wine was a unique experience of its winemaker and will no longer be produced, hence the limited number of bottles available.

90% Merlot, 10% Carminoir and Cabernet franc. This soft and full-bodied wine with intense ruby ​​red hues is born from the meticulous processing carried out entirely by hand of Merlot grapes selected from old vines, harvested late in the season after partial drying on the plant. The grapes harvested in the a specific regional vineyard in particular make this wine unique. Located at an altitude of 450 m above sea level, this vineyard boasts a south-west exposure and a slope of 70-100%, has a yield of less than 0.3 kg/m2 and small berries that express the roughness and typicality of the terroir. After a short cold pre-fermentation maceration (5-10 days), the grapes are macerated in large French oak barrels until alcoholic fermentation is complete. Malolactic fermentation takes place in new French oak barrels in which the wine is aged for a further 24-36 months. The result is a wine of great structure and complexity. Intense ruby ​​red colour.Intense and harmonious bouquet with good complexity, notes of black berry fruit and toasting with hints of vanilla and coffee.Full-bodied, warm, round and enveloping taste with good structure and intensity and a balanced, smooth and persistent aftertaste.Pairs well with premium red meat dishes, game birds, cured meats and hard Alpine cheese.
TTT- Trentatré Terroir Ticinesi Riserva DOC

100% Merlot For this wine, bunches of Merlot grapes from thirty-three terroirs spread throughout the Ticino region were carefully selected.The wine was born from the desire to enhance and enclose in a bottle the potential of the Ticino grape par excellence, Merlot, and of the Ticino vineyards, each with its own particular characteristics. Passion, creativity and the search for new challenges are at the heart of this new project.After a soft pressing that leaves the grapes partially whole and a short cold pre-fermentation maceration, the grapes are macerated in steel until alcoholic fermentation is completed according to the ancient technique of slatting (also called "submerged cap") for about 10 days.This technique allows for a slow and natural stabilisation of the colour of the wine, released by the skins and slowly absorbed by the must. The slow maceration also favours the polymerisation of tannins, which gives the wine a softer and velvety character. Malolactic fermentation and refinement in small new barriques follow for a period ranging from 24 to a maximum of 36 months. On the first nose, it presents with an intense and persistent fruity aroma and herbaceous and spicy scents. On the second nose, currant, ripe blackberry, cloves, vanilla notes that denote aging in wood, leather notes and medicinal herbs come through. Dry, warm, soft. It has well-defined tannins still in evolution. A wine with good freshness and flavor. Dry finish of medium length and persistence with pleasant notes of cigar box and toasted coffee. Pairs well with prime cuts of grilled meat and game.
